Sapporo Miso

Sapporo’s Ramen – Circa 1920s

Sapporo’s unique Ramen is said to have originated in a small cafeteria near Hokkaido University, “Takeya Shokudo”. A Chinese Chef that drifted over the border from Eastern Russia during the turbulence of the Russian Civil war brought with him the Chinese “La Mien” dish that first inspired Ramen.

Originally Shio (Salt) flavoured and clear-souped like the Chinese counterpart, Takeya’s Ramen became famous with the addition of the distinctly Japanese Miso (Fermented Soybean) to the soup. Also the name “Ramen” – coined by Chinese exchange students – is said to have come from this store and spread across the country.

Flavour Notes

Broth: Tonkotsu Pork (Thick, Creamy, Milk-like)

Flavour: Miso (Fermented Soybean Paste) 

Noodle: Hosomen – Thin, straight Egg White Noodles

Since our opening we have served Miso flavour Ramen with full Tonkotsu broth, and this combination is quite the favourite with our customers. It differs a bit from the true Ramen of Sapporo, which is described below.

Our Miso paste is made on premises and combines two types of miso with a range of vegetables and flavours. We mix this paste into the super-rich tonkotsu broth and combine with a touch of Miso Rayu – spicy oil also made on premises – for a unique, complexly flavoured and very thick broth. Best described “kind of like chocolate chili”, a mix of flavours – sour, sweet, savoury – that you have to try to believe. One of our house favourites, and a consistent best-seller.
