Our Ramen Philosophy:

The Ramen noodle dish first came to Japan from china in the 1860s, and has evolved significantly since to something very different and uniquely Japanese. Much like Japanese Curry or Omelette Rice, it is a dish now considered to be 100% local – and so loved and often consumed that you can find one on every other street corner in most parts of Japan.

The Ramen served here at Kokoro Ramen harks back to the old-time, natural flavour – home-made noodles, home-made soups slow-cooked on premises, all flavours and oils made on premises.

Our Ramen:

Using 100% Australian flour and egg, our noodles are made daily in store. For the thicker pork Tonkotsu soups we make thinner noodles with flour and egg whites – the customary way to enjoy Tonkotsu in Japan. For the lighter, thinner chicken based broth and Tokyo style Ramen we use chijiremen, thick and curly whole egg noodles – the characteristic “Ramen Noodle” you’ll often see in Japanese comics and TV shows. Each noodle is made with the perfect absorbtion, flexibility, chewability and texture to suit each soup.

Our Soups:

Our Tonkotsu soup is made daily using pork bone from female pigs and chicken bones to balance out flavour for an original combination. These are slow-boiled on medium fire for 8-10 hours, depending on the size of that day’s bones. We add a certain mix of vegetablse for just the right flavour. After a day’s cooking each soup is thick, rich and deliciously deep in flavour.

 

Flavour Oils:

To meet the needs of a health-conscious Australian public, our Ramen is served with the barest minimum of flavouring oils. Mayu (a special oil infused with slow-cooked garlic and strained just before the garlic burns completely black) retains a lovely, rich roast garlic flavour that adds a special savoury touch to every bowl of ramen. To add to that, we make a wide range of flavoured oils on premises – spring onion, shrimp, leek, etc – and combine each in carefully decided proportions to bring out the best in each of our Ramen flavours.
